A l’issue d’un premier vieillissement en fûts de Bourbon à la Jamaïque pendant 21,5 ans, le rhum à rejoint le Château de Bonbonnet en France,  2 ans en fut de cognac Ferrand, pour un nouveau vieillissement en fût de Rye Whiskey de la New York Distilling Company durant 6 mois.
Il s’agit de ce fût unique, réel coup de cœur pour l’équipe de passionnés que nous sommes au sein d’Excellence Rhum. Nous l’avons dégusté et sélectionné par nos soins dans les chais du château de Bonbonnet début d'année 2020. Ainsi, chaque Plantation Single Cask présente un vieillissement unique, et chaque bouteille est numérotée. Seulement quelques fûts de ces rhums sont embouteillés chaque année, faisant de ces expressions de véritables pièces de collection. Edition limitée à 144 bouteilles dont 42 bouteilles numérotées pour Excellence Rhum. Le mark ITP et HJC correspond à un taux de congeners (esters) de 90 à 120 gr/hlaap (hectolitre d'alcool pur) et son acronyme signifie Ive Trelawny Pot et 120 à 150 gr/hlaap pour HJC. Après vieillissement ce rhum developpe 280 gr/hlaap d'esters pour un total de 1133 gr/hlaap de TNA (composés volatiles);
